This is only the second recipe I’ve shared on my blog and it is ANOTHER one using ground chicken. That’s okay! It’s so yummy I think you can all forgive me for the repetition early on in this journey. I love being able to give recipes that have some leeway in them. I want you to be able to get in the kitchen, use the exact measurements I have and then learn what YOU like. Maybe add a pinch more of one spice or an extra tablespoon of your favorite herb. My heart is to see people fall in love with cooking real food for their families in an accessible and quick way. Some recipes may have more steps or a few ingredients you’re not familiar with but I encourage you to try it anyway! Sometimes things on paper or on a blog LOOK more complicated than they are and the only way to learn is to get in there and begin! If time is a major thing for you, just find quick recipes. Learn to search online for what your family needs. For us, I’ve added in more “Keto” searches lately but when I do that I am typically accompanying it with “Dairy Free Keto” or my favorite is “Whole30” searching because I’m familiar with it and know it’s not going to have anything containing grains or dairy which are my two things I keep to a minimum for myself. I’m not going to pin a recipe no pinterest that includes pre-packaged ingredients. The crock pot recipes where you throw in 5 cans of xyz, a block of cheese and a lb of some kind of meat are not my jam. It’s just not. If that’s for you, we just have a little difference of our needs for our family and that’s okay!

All of this to say, I am VERY excited to start sharing more recipes with y’all and encourage you to engage with me and let me know if you make them! Let me know if you substituted anything and how your family liked it! I can tell you, for our family, it’s very rare that something is a hit with EVERY person but there will be something in every meal that IS a hit individually for all people, if that makes sense. Don’t get discouraged if you’re newly transitioning away from a lot of packaged foods to fresh, real ingredients. There’s a learning curve in everything! You got this!!

Chicken Bacon Meatballs:

Ingredients:

*1lb ground chicken (can buy already ground or blend in food processor yourself)
*3 strips of Bacon (I love Pederson Farms)
*Handful of fresh Parsley (about 1/2 cup)
*A few Basil leaves (3-4)
*1/4 tsp ground Oregano
*1 1/2 T Coconut Flour
*1 egg
*1/2 tsp salt

In a small food processor, add in herbs & bacon until all is chopped and blended together. Add that to a medium size bowl with all the other ingredients. I use a cookie scoop to roll into balls and place on a baking sheet lined with parchment paper. Bake at 350 for 22-24 minutes.

—Sides to serve this with are endless. Roasted/steamed veggies, mashed cauliflower, cauliflower rice, regular rice, baked sweet or regular potatoes, Annie’s mac n cheese for kiddos. Put these on top of a big fat salad with a homemade ranch, extra raw veggies and cheddar cheese if you’re all about that Keto life.
