It’s the most WONDERFUL time of the year and I want to be prepared with treats that I’ll feel good about serving my friends and family. I bet you do too! Then there are those times where you’re just at home and craving something Pumpkin but one recipe only calls for a small portion of the can… or maybe that’s just me! I wanted to share 4 of my newest favorite recipes for using up an entire can of Pumpkin! All 4 of these recipes use similar ingredients so you’ll also be able to use things you’ve got on hand. These were very simple recipes, in my opinion. No fancy equipment required which is always a plus! I’ve been working on testing several recipes from other bloggers that are already available to keep in my arsenal when I need something yummy for a party. You better believe I won’t be serving OR sharing anything with people I care about (including YOU) that isn’t absolutely delicious and simple!

First up, Paleo Pumpkin Chocolate Chip Cookies by Paleo Running Momma
These were a HIT! I made them when we had some friends over for dinner. Follow this recipe exactly and you won’t be disappointed! Double it and take it to your holiday party but be warned… they won’t last long so grab one and gobble it up while you can!

Next on the list, Chocolate Chip Pumpkin Cheesecakes by PALEOMG!
Oh. My. Word! I had regular cheesecake on hand when I made these the first time so I can attest to the validity of their deliciousness even with that variation.

For our 3rd recipe, these Gluten Free Paleo Pumpkin Protein Muffins by PaleoGlutenFree were perfect when I also needed to use up a few very ripe bananas and we were down to the bare bones of what I had in the kitchen. If you follow me on Insta, you might remember my little experiment last week to attempt to only grocery shop ONE time. Unfortunately, I chose to attempt that without actual planning and having only gone to Costco for groceries that Sunday. (Love Costco, but they don’t have EVERYTHING) In any case, I was extremely grateful for this recipe! Kiddos ate them happily and now we have made them 3 different times in the last week. I even replaced the Pumpkin with Applesauce once and they were amazing still! I also added 2 Tbs of Flaxseed!

This final recipe came in handy last night when I also had EXACTLY 1 1/2 cups of Bob’s Red Mill GF flour left to use. The terrible thing about this recipe was that I made them late in the evening so the picture I took was in terrible lighting… and there were none left this morning to take a picture of! (OOPS!) Either way, there are beautiful photos when you go to the recipe for  these Baked Pumpkin Donuts from Allergylicious. You could easily make the glaze or icing for these donuts but we didn’t and it obviously wasn’t needed! Ha! I also added 2 Tbs of Flaxseed to this recipe.
